“Assessment of Meat Quality” - one-day Training Programme Conducted by Dept of LPT (MS), MVC

A one day training programme was conducted by the Department of Livestock Products Technology (Meat Science), Madras Veterinary College on “Assessment of Meat Quality” under the aegis of All India Co – ordinated Research Project on 16.10.2020 (World Food Day) to six FSSAI technical officers. The Professor and Head of the department elucidated about the quality of meat and its deterioration followed by a lecture on the Freshness of meat and Collection and Storage of meat samples by Dr. S. Ezhilvelan, Assistant Professor. Hands-on training sessions were conducted by Assistant Professors, Dr. R. Ramani, Dr. C. Vasanthi and Dr. A. Vanathi on the physico – chemical quality and microbial quality of meat.

Certificate distribution function was conducted at the end of the training. Dr. K. N. Selvakumar, the Dean, Madras Veterinary College, Dr. V. Appa Rao the Dean, Faculty of Food Sciences, TANUVAS, and Dr. M. Kannan, Deputy Director, FSSAI,Southern region graced the occasion. Welcome address was delivered by Dr. S. Ezhilvelan, Assistant Professor. Dr. R. Narendra Babu, Professor and Head, Department of Livestock Products Technology (Meat Science) honoured the Guests with shawls. The Dean, Madras Veterinary College, released the training manual. Certificate of participation was distributed by the Dean, Faculty of Food Sciences, TANUVAS to the participants. The function ended with a vote of thanks.


Meat Inspection - Training Programme Conducted by Dept of LPT (MS), MVC

A one day training programme was conducted by the Department of Livestock Products Technology (Meat Science), Madras Veterinary College on “Meat Inspection” under the aegis of All India Coordinated Research Project on 11.11.2020 to eleven Veterinary Assistant Surgeons from the Greater Chennai Corporation, Chennai.

The Professor and Head of the department interacted with the participants in the introduction session and explicated the significance of meat inspection, grading and judging of live food animals on foot and their carcasses on rail. Dr. S. Ezhilvelan, Assistant Professor explained in detail about the ante mortem inspection of live food animals and post mortem examination of their carcasses and the significance of lymph node examination in meat inspection. Dr. R. Ramani, Dr. C. Vasanthi and Dr. A. Vanathi, Assistant Professors conducted the hands on training session in which boiling test of meat and the laboratory tests for identification of imperfect bleeding and jaundice were done by the participants. Orientation and approach to lymph node and their examination was showed to the participants in beef, pork and lamb carcass models. Feed back of the training programme was collected from the participants by providing a questionnaire.

Certificate distribution function was conducted at the end of the training. Dr. V. Appa Rao, the Dean, Faculty of Food Sciences, Koduveli and Dr. J. Kamaal Hussain, Veterinary Officer, Greater Chennai Corporation, Ripon Building, graced the occasion. Dr. S. Ezhilvelan, Assistant Professor delivered the welcome address. Dr. R. Narendra Babu, Professor and Head, Department of Livestock Products Technology (Meat Science) honoured the Guests. Dr. J. Kamaal Hussain, Veterinary Officer released the manual on “Meat Inspection”. Training Programme on “Meat Processing and Quality Control” Conducted at Meat Technology Unit, Mannuthy

Association of Meat Scientists and Technologist and Meat Technology Unit, Mannuthy jointly organized a three day training on “Hygienic Slaughtering, Meat Processing and Quality Control” from22nd to 24th March 2018. Farmers and entrepreneurs from Kerala and Tamil Nadu participated in the programme. Formal inauguration of training programmes were done at seminar hall of Meat Technology Unit, Mannuthy on 22ndMarch 2018. Dr. Joseph Mathew, Registrar, KVASU inaugurated the programme,presided by Dr. B. Sunil, President AMST and Professor and Head, MTU. The training started with an introductive lecture by Dr. Sathu T., Assistant professor and course director of the training Programme, followed by lectures from experts of various discipline include Dr. V N Vasudevan and Dr. Irshad A., Assistant Professors, Department of Livestock Products Technology, Mr. Sindo, Proprietor, Online Store for Meat and Fish We Are Fresh, on various topics like hygienic slaughtering and dressing of cattle, pig and poultry, FSSAI licensing and packaging of meat and meat products, Value added meat products preparation, banking and marketing for entrepreneurs etc.

The valedictory function on 24 March,2018 was graced by the presence of Dr. J. Abraham, Founder Director, Meat Technology Unit and Dr. N. Ashok, Director (Academics and Research), KVASU. Dr. J. Abraham addressed the gathering and Dr. N. Ashokfelicitated the function. The training programme was concluded with the certificate distribution to participants. Dr. Sathu T., Course Director tendered vote of Thanks.
